Xpress to impress

My mom gave me this delightful gadget, the Tofu Xpress. It has a big spring that mushes the tofu into a little plastic square. It is totally amazing.

Look at all that tofu water oozing out. It says to press for an hour but I am impatient and after 20 minutes the tofu was totally better pressed than I have ever accomplished with a soggy-paper-towel-and-canned-goods tower. Of course it was also pretty flat. But that is a small price to pay.

After I overenthusiastically got started on pressing the tofu I realized that I didn’t have any marinading ingredients. So I mixed a bunch of junk together: apple cider vinegar, but then the creepy Mother started coming out, the Mother is so creepy, so just a little cider vinegar; fresh cider; white barley miso; a squirt of Bragg’s Liquid Aminos; some pressed garlic. I dipped the tofu slices in and put them on a piece of parchment, then poured the rest of the liquid over, and baked them until they started to brown.

MMmm it was so good I would make it again and again.

No pictures of breakfast because I’ve been eating toasted raisin pecan bread that I bought at Ithaca Bakery.
